Tomorrow is the first day of August and since I am 30-something weeks pregnant, I am transitioning into weekly menus again. Last weekend we were anticipating Hurricane Douglas’s impact, so I basically scrapped the last week of my July plan. Instead of buying a bunch of fresh food, losing power, and throwing it all away, we focused on buying shelf-stable foods and then worked on eating odds and ends out of the freezer and our pantry. As it turned out, Douglas did not track over Oahu (we barely even got any rain!), and the biggest discomfort I personally experienced from the storm was going day-to-day with no menu plan.
I also started some intensive meal prep to fill my freezer before this baby arrives – I’ll be sharing that in another post.
Saturday 8/1 – burgers (meat from freezer), hot dogs, watermelon, vegetable
Sunday 8/2 – pancakes, fruit, bacon
Monday 8/3 – roast chicken, farro/quinoa, fresh vegetable
Tuesday 8/4 – chicken and peach salad
Wednesday 8/5 – leftovers
Thursday 8/6 – eggs, vegetable, bread
Friday 8/7 – pizza, salad
